Ryan came home Thursday afternoon - (I came home on Wednesday morning). We had planned to grill, but we never got around to it.
However, we did make a little appetizer that filled us up. I cut up and toasted some foccacia bread and served it with tomato, basil (from our crop share), and fresh mozzarella.
Sometimes simple is better. I love these kinds of appetizers and I love to eat them for dinner if I don't have anything else planned. I recently ate Crostini with Sun-Dried Tomatoes and Chickpeas for dinner. YUM! Come See!
That fresh mozarella is so good! I'm going to have to make another run to Trader Joe's. Where else have you gotten it? I saved the marinade in case I found some that was not marinated. My most favorite new quick lunch meal is a basil leaf, cheese and tomato on a low-fat Triscuit. Very tasty and fulfilling.
Diane - I've only gotten the little mozzarella balls at Trader Joe's and Kowalski's. They have the large fresh mozzarella at Cub. Yum - the triscuit sounds great. We don't have any triscuts around...or really anything for that matter.

ReplyDeleteJeff - no olive oil...started to put balsamic vinegar on, but almost dumped the whole bottle, so I figured that was a sign to not add anything :)

I'm going to have to try this some time. I've actually NEVER had fresh mozzarella. How aweful is that? :0)
